Blueberry Walnut Bagels
Ingredients:
For the dough:
- 500g strong flour 
- 200g milk 
- 100g water 
- 9g salt 
- 9g fresh yeast 
- 10g sugar 
- 35g butter 
- 50g dried blueberries or cranberries 
- 70g soaked, chopped walnuts 
For the soaking solution:
- 8 cups of water 
- 0.5 cups of sugar 
Instructions:
1. Mixing the Dough:
- Combine all dough ingredients (strong flour, milk, water, salt, fresh yeast, sugar, butter, dried blueberries, and soaked walnuts) in a mixing bowl of a standing mixer. 
- Mix with the dough hook attachment on low speed for 5 minutes, then increase the speed to medium and mix for another 5 minutes. 
2. Resting the Dough:
- Leave the dough at room temperature to rest for 30 minutes. 
3. Dividing and Shaping:
- Divide the dough into 8 pieces, each weighing 120g. 
- Form each piece into a ball and let them rest at room temperature for 30 minutes. 
4. Shaping the Bagels:
- Shape the balls into bagels and proof them at 82°F for 30 minutes. 
5. Preparing the Soaking Solution:
- Mix the water and sugar in a deep metal bowl or pot. 
- Heat the solution until steaming hot but not boiling. 
6. Soaking the Bagels:
- Place each bagel into the soaking solution for 1 minute. 
- Remove the bagels, shake off excess water, and place them on a baking sheet covered with a silicone mat. 
7. Baking:
- Bake the bagels at 390-410°F for 15 minutes.
